The uncovered wire is the earth wire, that just goes to the grounding point on one of the pots. Can't remember which way the other two go, but you can't really go wrong with them, one way will be out of phase, one way will be in phase.
No offense dude but you might want to consider getting a custom pickguard made. The rather choppy look around the edges where you've cut it really ruins the look, but I think that'd look great if it had some cleaner edges. Of course, if that's your intention then it's cool, but there are dudes who could cut you a nice tight fitting one. 😉
