yes you can. Seems a bit daft tho - why not buy a guitar with single coils in the first place? The wiring is simple, but you might end up with a significantly quieter neck pup if you keep the bridge as a hummer. Could compensate by altering height. And there'll be a hole in the scratchplate around the pickup, obviously.
Oh, and you'll need a soldering iron.
or you could get a 4 wire humbucker and split the coils, but it won't sound as good as a proper single coil (in my experience)
