OK, now that I see the photo of the "made in Japan PUP I see why they would sound so different. Being so much narrower and taller you would not get the deeper rich classic Jazzmaster tone (if that is what you are after).
To get that original tone you would need some original style PUPS, some SD antiquities or find a custom winder (hopefully in your area). I wind in the original style (did some for AUG) but I am in the states and I love making them but to ship them to Italy would probably be a bummer.
However, depending on the sound you want , it is true you can hide just about anything under those big covers!
