Flux is not necessary to solder, but most rolls of solder come with flux in them.
To de solder you just heat up the existing solder joint with the solder gun and it comes apart. If you want to suck up all the extra old solder then buy a soldering strip. It looks like braided copper wire and it absorbs solder.
