You dont need to. I think my JS is 45mm thick, you hardly notice, plus, more wood = more sustain.
If you are concerned about weight you can add contours and a swimming pool route, my black mahogany JS is actually lighter than my Fender model.
*Edit* If your desperate take it to a Joinery workshop and ask then to take 10mm off with the Planer Thicknesser. I doubt they will even charge you.
