Woods are odd, each piece is different, even if it's the same species, even if it's from the same tree. There are general rules, mahogany is rich and full, alder bright, etc. but those don't always hold true.
I personally would like to learn more about which parts of a tree are considered "prime" as it were for certain types of tones, and also how to tell if a certain tree of a given type is good in comparison to other trees of the same type. What's the best age for a tree to be when you use it for guitar wood.
The drying out process, etc.
Not that it would really make that much difference in overall tone, in the end it might all make a 2% difference if I got brazilian rosewood versus indian rosewood, but it would still be nice to know and be able to choose yourself.
