I'd go with the '63, few reasons:
1) It has the cool factor, plain and simple. The Olympic White with a tort pickguard and aged pick up covers is a classic look. Plus, it still has what appears to be the original bridge cover, which is a great find as these are generally removed and lost to time. Plus, who can beat a matching 'stock?
2) Pre-CBS instruments tend to last a little longer, from what I've found. I'm not as vehemently anti-CBS as some Fender fans, but I have seen a difference in quality. Some of the CBS instruments are absolute crap, and if you can't play it first, always go pre-CBS.
3) The case on the pre-CBS, while certainly not original (I may be wrong though), appears to be a period piece. The faded orange rug on the inside is typical of guitar cases of the 60s and 70s. The other case (the one for the sunburst Jaguar) appears to be just some random case (based on the design, maybe mid to late 80's?). From the looks of it, not a very protective one either.
So I'll reiterate:
Go with the 1963 Jaguar 😎 .
