Hey man, I found a couple things that are not exactly what you asked for, but it does seem like a task to find exactly what you are looking for. Obviously, that's why you're asking for help, so maybe these can steer you in the right direction at minimum. Please note that I know nothing about guitar wiring so I can't help you out on exactly how to mod these schematics to apply for you. HNB posts on here a lot and builds his own guitars, he seems to be pretty knowledgeable when it comes to wiring schematics. Anyway, here is what I've located with about 20 minutes of looking:
Seymour Duncan 2HB, 2VOL, 0TONE
This is a link to a SD schematic with 2 humbuckers and 2 volume and no tone. I'm sure it would be similar to do THREE volumes and no tone with 3 single coils. Hopefully HNB can probably let you know exactly how it would work for 3 single coils, and he typically will draw you up a small schematic to show you how to accomplish it. Good luck!
