Also, I don't know what kind of budget you are working worth, but by putting in two single coils, you are essentially making the Jag-Stang identical to a Mustang. Not sure, but it may interest you to just pick up a used reissue Mustang and throw two Lollars in that. Strat style pickups will DEFINITELY fit into a Mustang...
and then I would upgrade the pickups in the Jag-Stang as well. Lace Red Dually in your Jag-Stang would work well paired with a Lace Blue in the neck for awesome tonal variations in the Jag-Stang. Then I would wire it so the switch above the bridge pickup is a humbucker splitter (i.e. with the switch in the middle you are using the full output of the humbucker, and with the switch either left or right you are using the humbucker split, and only using one coil.) Then I would make the switch above the neck pickup a pickup selector. That would make your Jag-Stang switchable from HS to SS in a very technical way. Just saying, I wouldn't dismiss it right away, because a split humbucker can get some seriously convincing single-coil spank if it is a good quality humbucker and wired properly.
