More versatile strat?

You can wire any guitar however you want, the strat police won't come and arrest you for doing it. It probably wouldn't make a significant difference though considering you'd still have all the same switching options from the 5-way switch/ 3 pickup combination.

Technically yes, although it would only be able to give you two options you wouldn't already have, which would be the bridge and neck pickups without the middle, and all three pickups at once. There are, however, switching systems capable of giving you these combinations already (I think Fender's S-1 Switch can do this), and you have to remember how much of a pain it would be to do all your pickup selection by adjusting volume levels on the fly rather than just flicking a switch.

The S1 switching is the only way to get every single combination on a standard fender bought strat. I don't think theres anyway to get more tonal variety unless you start putting in mid boosts and preamps...
