I wouldn't let the lack of covers on the SD's deter you 'cos they can be had cheap off ebay as well. Like Robb said, vintage spec'd SD's could be way better than RI Fenders.
Cool idea but why not just route the extra 3/8" for if you ever change your mind? If it's set up well and the arms out you won't get any noticeable movement. I f*cking love my Jag trem!
